John Wesselius plants Red THumb fingerling potatoes as he and his wife, Janna , owners of The Cornucopia garden farm, continue planting and preparing, April 2, 2012, for the Sioux City, Iowa, Farmer’s Market opening scheduled for May, 2012. The couple’s 2.5 acres is located north of Sioux Center, Iowa, and they plant a variety of vegetables including celery, peppers, cabbage, lettuce, kale, peas, beets, tomatoes, potatoes, spinach, broccoli, onions, cauliflower, Swiss chard, carrots and other salad mix items as well as some herbs. John says a good recipe for these potatoes is to cut them length ways, brush with olive oil and salt and pepper and bake at 400 degrees for 25-30 minutes and serve hot. (photo by Jerry Mennenga©)
